“I am now tasting La Furba, bottle opened yesterday. Og my God, such an amazing development – today with a deeper more fleshy fruit but still a lingering almost metallic acidity – like tomato as we discussed. Some green olive too. The wine is soft today but with a very persistent edge. The “Sangiovese-cherries” have become darker and heavier. The finish is almost mature Burgundian, but let’s not talk about France; this is Italian. Tuscan. Sangiovese. End finish on palate now (I taste while I write) is dust, broken flowers, clay and earth. Complimenti. I think I have a new favorite Sangiovese.”
Furba was the clever fox that stole our dinner during our fist stay at the winery. She is one of many creatures who live and thrive on this beautiful piece of land. “La Furba” is born from the idea of creating a wine capable of transmitting territoriality and pure fruit. The must is fermented with indigenous yeast and macerated for 6 months inside a coccio-pesto amphora. The combination of whole bunches, inert and porous material makes this wine a extraordinarily and pure expression of Sangiovese from Montalcino.
